We were out of bananas this morning, after I had already fed the gang and was making myself something, so I had to improvise. Grabbed a few ingredients from the fridge and pantry and got to work. I loved it so much, I made another one.....
1/8 c. + organic applesauce (go heavy on the 1/8 c.)
1 organic, farm egg
1 organic, farm egg yolk
1 T. chestnut flour (a nice, FULL T.)
1 t. baking soda
dash of organic vanilla
Pulse all ingredients in the BlendTec. Pour batter into hot cast iron skillet (heavily greased with organic coconut oil). Sprinkle with organic cinnamon. Cook on low heat to avoid burning. Flip and cook on low heat. Serve with a heaping dollop of organic, grass-fed ghee and a smidge of raw honey.
